Earlier in his career, Chef Jean-Marie Auboine was invited to lead a three-day professional master class focused on chocolate panning and confection techniques at Maui Community College. This historical feature highlights his experience as an educator and industry consultant during that period of his career.
Held at Maui Community College, the class focused on both confectionery work and chocolate panning techniques, covering a wide range of creations including marshmallows, nougats, chocolate bars, pâte de fruit, caramels, pralines, and coated chocolate specialties.
The workshop also explored the artistic and technical side of chocolate panning, featuring glossy, powdered, marble, and sugar-coated finishes across numerous flavor combinations and textures. Participants learned both creative concepts and technical polishing processes used in professional confection production.
