Gourmet Chocolate of the Month Club Highlights Jean-Marie Auboine Chocolatier

We were honored to be featured by Gourmet Chocolate of the Month Club, a curated subscription experience dedicated to introducing members to artisan chocolatiers and premium confections from around the world.

The feature highlighted the journey and craftsmanship behind Jean-Marie Auboine Chocolatier, from Chef Jean-Marie Auboine’s early culinary training in France to the creation of handcrafted chocolates and confections in Las Vegas.

Recognized internationally for his pastry and chocolate expertise, Chef Jean-Marie Auboine trained in prestigious kitchens including Alain Ducasse’s Louis XV in Monaco before leading pastry and chocolate programs for luxury hotels and resorts around the world. His career later brought him to Las Vegas, where he founded Jean-Marie Auboine Chocolatier in 2011.

The Gourmet Chocolate of the Month Club feature described Chef Auboine as “an international master chocolatier” and showcased a curated assortment of handcrafted creations inspired by ingredients sourced from across the globe.

Among the featured chocolates were signature ganaches infused with jasmine tea, saffron, cinnamon caramel, wildflower honey, raspberry and porto wine, highlighting the brand’s approach to combining classic French technique with bold and refined flavor profiles.

The feature also spotlighted Jean-Marie Auboine Chocolatier’s award-winning Double Sea Salt Caramels, recognized by The New York Times. The handcrafted caramel ganache layered with buttery caramel and finished with Brittany sea salt has become one of the brand’s signature creations.

In addition to artisan bonbons and ganaches, the feature introduced the brand’s small-batch bean-to-bar chocolate program. At the time, Chef Jean-Marie Auboine was among the few chocolatiers producing handcrafted couverture chocolate from carefully selected cacao beans processed in Las Vegas.

The article also emphasized the handcrafted nature of the collection, from hand-painted chocolates and small-batch production to premium ingredients selected for both quality and flavor complexity.

Today, Jean-Marie Auboine Chocolatier continues to create luxury handcrafted chocolates in Las Vegas, combining French pastry tradition, global culinary inspiration, and artisan craftsmanship in every collection.
