We partner with Felchlin, a renowned Swiss chocolate producer known for its focus on quality and sustainability. What makes our chocolate truly distinctive is that the couverture we use was developed specifically for Jean-Marie Auboine Chocolatier. Chef Jean-Marie Auboine personally selected the cacao beans and defined the flavor profile to meet his exact standards.
The fruits of this work is our Auboine Putamayo 65% dark chocolate couverture, crafted from cacao beans sourced from the Putumayo region of Colombia. This origin brings a rich and complex profile, with a deep cocoa aroma, a smooth and velvety texture, and a balanced intensity that enhances both sweetness and depth.
This chocolate is designed not only for structure and technique, but for flavor expression. It melts cleanly on the palate, allowing the different notes to unfold progressively, while maintaining a refined balance that never overwhelms.
