Finding and sourcing the perfect cacao is the first step. We work with growers in the Dominican Republic, Ghana, Venezuela and even Viet Nam. We source responsibly from wherever the best beans are grown.

 

Other vital ingredients are just as important. We buy real vanilla from Mexico. We procure farmer-direct hazelnuts from Oregon. Our almonds are carefully selected from California. We import Kalamansi Citrus from the Philippines. And the list goes on. No nook or cranny on our planet is too far-flung. We go wherever the best ingredients are grown. We know that’s what you would want us to do.

 

In Jean-Marie’s own words: “Chocolate needs to taste like chocolate. If you have an amazing ingredient, this ingredient needs to shine by itself using the right technique and skills. Chocolatiers need to be innovative but they also need to keep the tradition alive.”
